    Prepare the Potatoes

    Preheat your grill or fire pit to medium-high heat. Rinse the baby potatoes and cut them in half.

    Season the Potatoes

    In a large bowl, combine the halved potatoes with olive oil, salt, black pepper, chopped rosemary, chopped thyme, and lemon zest. Toss until the potatoes are well coated.

    Wrap and Roast

    Place the seasoned potatoes in a large piece of aluminum foil. Fold the foil to create a sealed packet. Place the packet on the grill or over the fire. Roast for about 20-25 minutes, turning occasionally.

    Make the Herb Butter

    In a small bowl, combine the softened unsalted butter with fresh lemon juice, and a pinch of salt. Mix in additional chopped herbs if desired.

    Serve

    Once the potatoes are tender and cooked through, remove the foil packet from the grill. Carefully open the packet, and drizzle the herb butter over the hot potatoes. Serve immediately.
