Prepare the Dacquoise
Preheat your oven to 325°F (160°C). Line three 8-inch round cake pans with parchment paper.

Make the Passionfruit Orange Cream
In a mixing bowl, whip the heavy cream until soft peaks form. Gently fold in the passionfruit puree, orange zest, and orange juice until well combined. Set aside in the refrigerator to chill.

Prepare the Orange Caramel
In a saucepan, combine the granulated sugar and water. Cook over medium heat until the sugar has dissolved and turns a golden amber color. Remove from heat and let cool slightly.

Assemble the Cake
Place one layer of Dacquoise on a serving plate. Spread a layer of the passionfruit orange cream on top. Repeat with the remaining layers.

Serve with Vanilla Rum Ice Cream
Scoop the vanilla ice cream into bowls, drizzle with dark rum, and serve alongside the Coconut Dacquoise Cake.
