Prepare the crust
Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 8-10 minutes until golden. Remove from oven and let it cool.

Make the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar, sour cream, and vanilla extract, mixing until well combined. Add eggs one at a time, mixing on low speed until just combined.

Combine and bake
Pour the cream cheese mixture over the cooled crust. Bake in the preheated oven for 55-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.

Chill and top
After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight. Before serving, top with fresh berries and a dusting of powdered sugar.
