    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Wash and scrub the potatoes, then cut them into wedges. Toss the wedges with olive oil, salt, and pepper, and spread them in a single layer on a baking sheet.

    Roast the Potatoes

    Roast the potatoes in the preheated oven for about 30-35 minutes, or until golden brown and crispy, flipping halfway through.

    Prepare the Steak

    While the potatoes are roasting, season the strip steak generously with salt, black pepper, and fresh herbs. Let it sit at room temperature for about 15 minutes.

    Cook the Steak

    Heat a skillet or grill over high heat. Add a little olive oil if using a skillet. Once hot, sear the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Rest the Steak

    Remove the steak from the heat and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.

    Prepare the Vegetables

    In the last 10 minutes of cooking the potatoes, steam or sauté the seasonal vegetables until tender but still crisp.

    Slice the steak and serve it with the roasted potatoes and seasonal vegetables on the side. Drizzle VB steak sauce over the steak as desired.
