Prepare the Grill
Preheat the grill to medium-high heat.

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and place on paper towels to drain excess fat.

Make Parmesan Crisps
On a baking sheet lined with parchment paper, place small mounds of grated Parmesan cheese and bake at 400°F (200°C) for about 5-7 minutes until golden and crispy. Let cool.

Prepare Scallions
Chop the scallions finely.

Assemble the Salad
On a serving platter, arrange the grilled romaine halves. Crumble the crispy bacon over the top, add the chopped scallions, and place the Parmesan crisps around the salad. Drizzle with house-made Caesar dressing and sprinkle with Parmigiano-Reggiano.
