    Prepare the Beef

    Season the aged beef tenderloin with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the beef on all sides until browned. Cook to desired doneness, about 4-5 minutes for medium-rare. Remove and let it rest.

    Caramelize the Onions

    In the same skillet, add butter and sliced onions. Reduce heat to medium-low and cook until the onions are soft and caramelized, about 15 minutes. Add salt to taste.

    Cook the Orzo

    In a separate pot, bring salted water to a boil. Add orzo and cook according to package instructions until al dente. Drain and set aside.

    Make the Bordelaise Sauce

    In the skillet with the onions, add red wine and beef stock. Bring to a boil, then reduce heat and simmer until reduced by half. Adjust seasoning if necessary.

    Prepare the Cherry Balsamic Reduction

    In a small saucepan, combine cherries, balsamic vinegar, and a pinch of salt. Cook over medium heat until the mixture thickens, about 10 minutes. Strain if desired.

    Mix the cooked orzo with caramelized onions and bleu cheese until creamy. Slice the beef tenderloin into bite-sized pieces and serve over the orzo. Drizzle with bordelaise sauce and cherry balsamic reduction.
