Prepare the Peppers
Preheat your oven to 400°F (200°C). Cut the red and yellow bell peppers in half, remove the seeds, and place them skin-side up on a baking sheet.

Roast the Peppers
Roast the peppers in the preheated oven for about 25-30 minutes or until the skins are blistered and charred. Once done, remove from the oven and let them cool slightly.

Peel the Peppers
Once the peppers are cool enough to handle, peel off the charred skin and cut the peppers into strips.

Prepare Artichokes
If using canned artichoke hearts, drain and rinse them. If using frozen, thaw and drain any excess water.

In a bowl, combine the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and black pepper. Whisk until well combined.

In a large mixing bowl, add the roasted pepper strips and artichoke hearts. Pour the marinade over the vegetables and toss gently to coat.
