Marinated Roasted Peppers and Artichokes

Method

Preparation Steps

  1. 1

    Prepare the Peppers

Preheat your oven to 400°F (200°C). Cut the red and yellow bell peppers in half, remove the seeds, and place them skin-side up on a baking sheet.

  2. 2

    Roast the Peppers

Roast the peppers in the preheated oven for about 25-30 minutes or until the skins are blistered and charred. Once done, remove from the oven and let them cool slightly.

  3. 3

    Peel the Peppers

Once the peppers are cool enough to handle, peel off the charred skin and cut the peppers into strips.

  4. 4

    Prepare Artichokes

If using canned artichoke hearts, drain and rinse them. If using frozen, thaw and drain any excess water.

  5. 5

    Make the Marinade

In a bowl, combine the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and black pepper. Whisk until well combined.

  6. 6

    Combine Ingredients

In a large mixing bowl, add the roasted pepper strips and artichoke hearts. Pour the marinade over the vegetables and toss gently to coat.

  7. 7

    Marinate

Cover the bowl with plastic wrap or transfer to a jar with a lid. Let the mixture marinate in the refrigerator for at least 1 hour, or overnight for more flavor.

  8. 8

    Serve

Before serving, garnish with fresh basil leaves. Serve chilled or at room temperature as an appetizer or side dish.
