Bratwurst Preparation

    Prepare the Meat Mixture

    In a large bowl, grind the pork shoulder and pork fat together. Add minced garlic and finely chopped onion to the mixture.

    Season the Mixture

    Add salt, black pepper, nutmeg, coriander, and chopped parsley to the meat mixture. Mix thoroughly until well combined.

    Prepare the Casings

    Soak the hog casings in cold water for at least 30 minutes. Rinse them thoroughly and set aside.

    Stuff the Sausage

    Using a sausage stuffer, fill the casings with the meat mixture, being careful not to overstuff. Twist into desired sausage lengths.

    Cook the Bratwurst

    Grill or pan-fry the bratwursts over medium heat for about 15-20 minutes, turning occasionally until the internal temperature reaches 70°C (160°F).
