Prepare the Pork Schnitzel
Pound the pork loin to about 1/2 inch thickness. Season with salt and pepper. Dredge in flour, dip in beaten eggs, and coat with breadcrumbs.

Fry the Schnitzel
In a large skillet, melt butter over medium heat. Add the schnitzels and cook for about 4-5 minutes on each side until golden brown. Remove and keep warm.

Make the Mushroom Sauce
In the same skillet, add sliced onions and mushrooms. Sauté for about 5 minutes until soft. Pour in the heavy cream and simmer for another 3-4 minutes until the sauce thickens.

Cook the Mixed Vegetables
In a separate pot, bring water to a boil and add mixed vegetables. Cook for about 3-4 minutes until tender, then drain.

Serve
Plate the schnitzel, pour the mushroom sauce over the top, and serve with mixed vegetables and fried potatoes on the side.
