Preheat the Oven
Preheat your oven to 375°F (190°C).
Prepare the Apple Filling
In a large bowl, combine the sliced apples, granulated sugar, ground cinnamon, vanilla extract, and lemon juice. Toss well to combine, and set aside.
Prepare the Puff Pastry
Roll out each puff pastry sheet on a lightly floured surface into a rectangle. Place one sheet on a baking sheet lined with parchment paper.
Roll the Strudel
Carefully fold the sides of the pastry over the filling and roll it up tightly. Seal the ends by pinching the pastry together. Repeat with the second pastry sheet and remaining apple filling.
Prepare the Whipped Cream
While the strudels are baking, whip heavy cream (not listed in ingredients) until soft peaks form. Add sugar to taste and continue whipping until stiff peaks form.
Serve
Once baked, remove the strudels from the oven and let them cool slightly. Dust with powdered sugar and serve warm with whipped cream.
