Bavarian Potato-Dumplings

Preparation

Prepare the Roulade

Lay the beef flank steak flat on a clean surface. Spread mustard evenly over the surface.

Chop the bacon, onion, and pickles and sprinkle them evenly on the mustard-covered beef.

Season with salt and black pepper, then roll the beef tightly and secure with kitchen twine or toothpicks.

Cook the Roulade

Heat olive oil in a large skillet over medium heat. Sear the roulade on all sides until browned.

Add water to the skillet, cover, and simmer for about 1.5 hours until the beef is tender.

Prepare the Red Cabbage

Shred the red cabbage and chop the apple. Combine in a pot with vinegar, sugar, salt, and caraway seeds.

Cook on low heat for about 30 minutes until the cabbage is soft.

Prepare Bavarian Potato-Dumplings

Boil the potatoes until tender. Peel and mash them.

Combine mashed potatoes with flour, egg, and salt. Form into balls and cook in boiling salted water until they float, about 10 minutes.

Serve

Slice the roulade, serve with red cabbage and potato dumplings on the side.
