Cooking Pasta

    Boil the Pasta

    In a large pot, bring water to a boil. Add 1 teaspoon of salt and the penne pasta. Cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside.

Preparing the Sauce

    Sauté Garlic and Tomatoes

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add 4 minced garlic cloves and sauté for about 1 minute until fragrant. Add 400g of halved cherry tomatoes and cook until they soften, about 5 minutes.

    Add Spinach and Cream

    Add 200g of fresh spinach to the skillet and stir until wilted, about 2 minutes. Pour in 150ml of heavy cream and stir to combine.

    Season the Sauce

    Add 1 teaspoon of red pepper flakes, 1 teaspoon of salt, and 1 teaspoon of black pepper to the sauce. Stir well and let simmer for 3-4 minutes until slightly thickened.

    Combine Pasta and Sauce

    Add the drained penne pasta to the skillet, tossing to combine with the sauce. Stir in 50g of grated Parmesan cheese until melted and well mixed.

Serving

    Garnish and Serve

    Serve the pasta in bowls, garnished with 2 tablespoons of chopped fresh basil and an additional 30g of grated Parmesan cheese on top.
