Wine Making Process

1. Harvesting Grapes

Harvest the Cabernet Sauvignon grapes and remove any leaves or stems. Ensure the grapes are ripe and free from any mold.

2. Crushing Grapes

Place the harvested grapes in a clean fermentation bucket. Use a grape crusher or your hands to crush the grapes, releasing the juice while leaving the skins intact.

3. Preparing Must

Add the water to the crushed grapes to create a mixture known as must. Stir thoroughly to combine.

4. Adding Sugar and Yeast

Dissolve the sugar in a small amount of warm water and add it to the must mixture. Sprinkle the wine yeast over the surface of the must and stir gently to incorporate.

5. Adding Potassium Metabisulfite

Dissolve potassium metabisulfite in a small amount of water and add it to the must to prevent unwanted bacteria and spoilage.

6. Fermentation

Cover the fermentation bucket with a clean cloth and let it sit in a dark, cool place for about 7-14 days. Stir daily and check for bubbling, indicating fermentation.

7. Pressing the Wine

Once fermentation is complete, use a wine press to separate the liquid from the solids, transferring the liquid to a clean fermentation vessel.

8. Secondary Fermentation

Allow the wine to undergo secondary fermentation for about 4-6 weeks in a cool and dark environment. Check the specific gravity to ensure fermentation is complete.

9. Bottling

Once fermentation is complete, siphon the wine into clean bottles, leaving some space at the top. Seal the bottles with corks.

10. Aging

Store the bottles upright in a cool, dark place for at least 6 months to allow the flavors to mature.
