Prepare the Steak

Remove the coulottes steak from the refrigerator and let them come to room temperature for about 30 minutes.

Season the Steak

Pat the steak dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Steak

In a large skillet or grill pan, heat the olive oil over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Rest the Steak

Remove the steaks from the pan and place them on a cutting board. Cover loosely with aluminum foil and let them rest for 5-10 minutes.

Make the Espresso Butter

In a medium bowl, combine the softened unsalted butter, espresso powder, minced garlic, chopped parsley, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Shape the Butter

Transfer the butter mixture onto a piece of plastic wrap. Shape it into a log and wrap tightly. Chill in the refrigerator for at least 30 minutes or until firm.

Serving Directions

Serve the Steak

Slice the rested steak against the grain. Serve with a slice of the chilled espresso butter on top of the warm steak.
