1. Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

2. Mix Wet Ingredients

In another bowl, beat the egg and then add the milk, melted butter, and vanilla extract. Mix until combined.

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix; small lumps are okay.

If desired, fold in chocolate chips or blueberries into the batter.

5. Heat the Pan

Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

6. Cook Pancakes

Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
