Peel and Grate Potatoes
Peel the russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

Finely chop the onion and set aside.

In a large skillet, heat the vegetable oil and butter over medium-high heat until hot but not smoking.

Cook Hash Browns
Press the potato mixture down into an even layer with a spatula. Let it cook undisturbed for about 5-7 minutes until the bottom is golden brown and crispy.

Flip and Cook Other Side
Carefully flip the hash browns using a large plate to assist. Cook the other side for another 5-7 minutes until golden brown and crispy.
