In a bowl, whisk together the large eggs, milk, salt, and black pepper until fully combined and slightly frothy.

Cook the Vegetables
In a non-stick skillet, melt the butter over medium heat. Add the diced bell peppers and onions, and sauté for about 2-3 minutes until they are softened. Stir in the chopped spinach and cook for another minute until wilted.

Add Fillings
Sprinkle shredded cheese and, if using, cooked bacon or ham over one half of the omelet. Allow it to cook for another 1-2 minutes until the cheese melts.

Gently fold the omelet in half over the fillings. Cook for an additional minute to ensure the center is fully cooked. Slide the omelet onto a plate.
