Prepare the Streusel Topping

    Mix the Ingredients

    In a medium bowl, combine 0.5 cups of all-purpose flour, 0.5 cups of brown sugar, and 0.5 tsp of cinnamon.

    Add Butter

    Add 4 tbs of unsalted butter to the flour mixture. Use a fork or your fingers to mix until the mixture resembles coarse crumbs.

    Set Aside

    Once mixed, set the streusel topping aside while you prepare the pancake batter.

Make the Pancake Batter

    Combine Dry Ingredients

    In a large bowl, whisk together 1 cup of all-purpose flour, 2 tsp of baking powder, 2 tbs of sugar, and 1 tsp of salt.

    In another bowl, whisk together 1 cup of milk, 1 large egg, 1 tsp of vanilla extract, and 2 tbs of melted butter.

    Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

    Fold in Blueberries

    Gently fold in 1 cup of fresh blueberries into the pancake batter.

Cook the Pancakes

    Preheat a non-stick griddle or skillet over medium heat. Lightly grease with butter or cooking spray.
