Prepare the Beans
In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes. Add the canned black beans (drained and rinsed) and cook for an additional 5 minutes. Season with salt and pepper to taste. Set aside and keep warm.

Cook the Eggs
In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the skillet and fry them to your desired doneness (sunny-side-up, over-easy, etc.). Season with salt and pepper.

Assemble the Dish
To assemble, place two warm blue corn tortillas on each plate. Spoon half of the black beans mixture onto each tortilla. Top with a fried egg, diced tomato, and chopped cilantro. Garnish with avocado slices and lime wedges.
