Method

Prepare Benedict Bliss

    Toast the English Muffins

    Split the English muffins in half and toast them until golden brown. Set aside.

    Cook the Canadian Bacon

    In a skillet over medium heat, cook the Canadian bacon slices until they are heated through and slightly crispy. Set aside.

    Poach the Eggs

    Fill a pot with water and bring it to a gentle simmer. Crack each egg into a small bowl, then gently slide it into the simmering water. Poach the eggs for about 3-4 minutes for a runny yolk, or longer for firmer yolks. Remove the eggs with a slotted spoon and place them on a paper towel to drain.

    Prepare the Hollandaise Sauce

    If using store-bought Hollandaise, warm it according to package instructions. If making from scratch, whisk together egg yolks, lemon juice, and melted butter until smooth and creamy. Season with salt and pepper to taste.

    On each toasted English muffin half, place a slice of Canadian bacon and top with a poached egg. Generously drizzle with Hollandaise sauce and garnish with chopped fresh parsley.
