Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C). This will ensure that the chilaquiles cook evenly.

  2. 2

    Prepare the Ingredients

Chop the spinach, dice the tomatoes, slice the red onion, and pit and chop the olives. Crumble the feta cheese and set all ingredients aside.

Assembly

  1. 3

    Layer the Ingredients

In a large baking dish, create a layer of tortilla chips at the bottom. Scatter half of the chopped spinach, olives, diced tomatoes, and red onion over the chips.

  2. 4

    Add Feta and Seasonings

Sprinkle half of the crumbled feta cheese over the top, then drizzle with olive oil, and season with salt, black pepper, and red pepper flakes to taste.

  3. 5

    Repeat Layers

Add another layer of tortilla chips followed by the remaining spinach, olives, tomatoes, and red onion. Top with the remaining feta cheese.

Baking

  1. 6

    Bake the Chilaquiles

Place the baking dish in the preheated oven and bake for about 20-25 minutes until the chips are crispy and the cheese is slightly golden.

Serving

  1. 7

    Serve with Tzatziki

Once baked, remove the chilaquiles from the oven and let cool slightly. Serve warm with a generous dollop of tzatziki sauce on top.
