Prepare the Dough
In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy. Add olive oil, salt, and flour gradually, mixing until a dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm area for about 1 hour, or until doubled in size.

Roll Out the Dough
Once risen, punch down the dough and roll it out on a floured surface into a rectangle approximately 1/4 inch thick.

Add Fillings
Spread the pepperoni slices evenly over the dough, followed by the three-cheese blend.

Roll and Cut
Starting from one end, carefully roll the dough into a tight log. Cut the log into 1-2 inch pieces and place them on a baking sheet lined with parchment paper.

Bake
Preheat the oven to 375°F (190°C). Bake the roll-ups for 20-25 minutes or until golden brown.

Serve
Remove from the oven and let cool slightly. Serve warm with housemade marinara sauce for dipping.
