Shrimp Scampi

    Cook the Pasta

    Boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Shrimp

    In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Cook the Shrimp

    Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Stir in lemon juice, parsley, red pepper flakes, salt, and black pepper.

    Combine

    Toss the cooked pasta in the skillet with the shrimp mixture until well combined. Serve hot.

Chicken Spinoccoli

    Prepare the Chicken

    Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and black pepper.

    Cook the Spinach

    In a skillet, heat olive oil over medium heat. Add minced garlic and spinach, cooking until the spinach is wilted.

    Make the Filling

    In a mixing bowl, combine the cooked spinach, cream cheese, and half of the Parmesan cheese. Mix until well blended.

    Stuff the Chicken

    Cut a pocket into each chicken breast and stuff with the spinach filling. Place in a baking dish.

    Bake

    Sprinkle the remaining Parmesan cheese on top of the stuffed chicken. Bake for 25-30 minutes until the chicken is cooked through.
