Add Flavor
Pour in the dry white wine and scrape the bottom of the pot to deglaze. Let it simmer for about 5 minutes until the wine has mostly evaporated.

Build the Soup Base
Add the beef broth, fresh thyme, bay leaf, salt, and black pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.

Prepare the Bread
While the soup is simmering, preheat your oven to 350°F (175°C). Place the slices of French bread on a baking sheet and toast them in the oven for about 10 minutes, or until golden brown.

Assemble and Broil
Ladle the soup into oven-safe bowls, place a slice of toasted bread on top of each bowl, and generously sprinkle with Gruyère and Parmesan cheese. Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden.

Remove from the oven, let cool slightly, and serve hot.
