Prepare the Fries
Peel and cut the potatoes into thick strips. Soak in cold water for at least 30 minutes, then drain and pat dry.

Make the Beer Batter
In a large bowl, whisk together flour, cornstarch, baking powder, and salt. Gradually add beer until the batter is smooth and thick.

Fry the Cod
Heat vegetable oil in a deep pot to 350°F (175°C). Dip each cod fillet in the beer batter, then fry in the hot oil until golden brown, about 4-5 minutes. Remove and drain on paper towels.

Fry the Potatoes
In the same oil, fry the soaked potato strips until golden and crispy. Remove and drain on paper towels, then season with salt.

Prepare the Tartar Sauce
In a bowl, mix mayonnaise, chopped pickles, and lemon juice together. Set aside.

Make the Coleslaw
In a large bowl, combine shredded cabbage, diced pineapple, chopped cilantro, and jalapeno. Toss with a drizzle of olive oil and salt to taste.

Serve
Plate the fish alongside fries, coleslaw, and a side of tartar sauce.
