Prepare the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with olive oil, salt, and black pepper. Place them in a baking dish.

Bake the Chicken
Bake the chicken in the preheated oven for 25-30 minutes or until fully cooked and juices run clear. Remove from oven and let rest for a few minutes.

Cook the Broccoli
While the chicken is baking, steam or boil the broccoli florets for about 4-5 minutes until tender but still vibrant green. Drain and set aside.

Prepare the Spinach and Ricotta Mixture
In a large skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add fresh spinach and cook until wilted. Remove from heat and stir in ricotta cheese.

Serve
Serve the chicken spinach and ricotta mixture over a bed of steamed broccoli and top with grated Parmesan cheese.
