Prep aromatics and mix
In a large bowl combine the ground meat, diced onion, minced garlic, chopped cilantro, chopped roasted red pepper, panko breadcrumbs, crumbled queso (if using), egg, cumin, smoked paprika, chili powder, salt and black pepper. Use your hands or a fork to gently mix until ingredients are evenly distributed but do not overwork the meat — stop when everything is homogenous.

Form patties
Divide mixture into 4 even portions (about 4 ounces each). Flatten each portion into a patty roughly 3½ inches wide and about 3/4 inch thick. Create a slight dimple in the center of each patty with your thumb to help them cook evenly and prevent puffing.

Chill (optional but recommended)
Cover the patties and refrigerate for 15–30 minutes. Chilling helps them firm up so they hold together while cooking.

Cook patties
Heat a large skillet or cast-iron pan over medium-high heat. Add 2 tablespoons vegetable oil and swirl to coat. Once shimmering, add patties without crowding the pan. Cook 3–4 minutes on the first side until deeply browned and crispy. Flip and continue cooking 3–4 minutes for medium (internal temp ~160°F/71°C for beef; 165°F/74°C for turkey) or until desired doneness. If using cheese, place a slice on each patty in the last minute of cooking and cover the pan to melt.

Rest
Transfer cooked patties to a plate and let rest 3–5 minutes to redistribute juices before assembling.
Spicy Avocado Mayo (topping)

While patties chill or cook, make the sauce: In a small bowl mash the half avocado with a fork until mostly smooth. Stir in mayonnaise, lime juice, hot sauce, salt, and pepper until well combined. Taste and adjust seasoning or heat. If you prefer a thinner sauce, add 1–2 teaspoons of water or more lime juice.

Build burgers: Spread 1–2 tablespoons of the spicy avocado mayo on the bottom bun. Place a handful of shredded lettuce, then the patty, add tomato slice and red onion as desired. Top with extra mayo if you like, then the top bun. Serve with lime wedges on the side for an extra citrus pop.

Serve & store: Serve immediately. Leftover patties keep in the refrigerator for up to 3 days; reheat gently in a skillet over low heat or in a 350°F (175°C) oven until warmed through. Store leftover sauce in an airtight container for up to 24 hours and stir before using.
