Beef Patty

1. Combine and season

Place the ground beef in a large bowl. Add the finely diced white onion, minced garlic, chopped cilantro, ground cumin, chili powder, smoked paprika, lime zest, lime juice, salt, and black pepper.

2. Add the cold water to the mixture (this helps keep the patties juicy and binds the meat gently). Using your hands or a fork, mix the ingredients together gently until just combined. Do not overwork the meat — mix about 20–30 seconds until evenly distributed.

3. Divide the meat into four equal portions (for 4 patties). Form each portion into a round patty about 3/4-inch thick and slightly larger than the buns; press a shallow dimple in the center of each patty with your thumb to prevent doming while cooking.

4. Cook the patties

Heat a large skillet or cast-iron pan over medium-high heat. Add 1 tablespoon vegetable oil and let it heat until shimmering. Place patties in the pan without crowding (work in batches if necessary). Cook undisturbed for 3–4 minutes until a brown crust forms on the first side.

5. Flip the patties and cook for another 3–4 minutes for medium doneness (internal temperature ~160°F / 71°C for well-done ground beef). If you prefer cheeseburgers, add cheese slices in the last minute and cover the pan to melt.

6. Transfer cooked patties to a plate and tent loosely with foil. Let rest 3–5 minutes before assembling (this helps retain juices).

Toppings & Assembly

7. Prepare toppings while the patties cook: season sliced tomato and avocado with a light pinch of salt (about 1/8–1/4 teaspoon split between them). Place shredded lettuce, sliced onion, tomato, avocado (or guacamole), and pickled jalapeños on a tray for easy assembly.

8. Warm the buns in a dry skillet or oven for 1–2 minutes cut-side down until lightly toasted. Optionally spread a thin layer of Mexican crema or sour cream on the top or bottom bun and a few drops of hot sauce if you like heat.

9. Assemble each sandwich: bottom bun, shredded lettuce, a cooked Mexican patty, tomato slices, sliced onion, avocado or a dollop of guacamole, pickled jalapeños to taste, then top bun. Serve immediately while hot.

10. Optional serving suggestions: Add a squeeze of fresh lime over the assembled patty or serve with fries, tortilla chips, or a side of pico de gallo.
