    Prepare onions

    Peel the onions and slice into 1/4- to 1/2-inch thick rings. Separate rings and set aside.

    Make batter

    In a medium bowl whisk together all-purpose flour, cornstarch, baking powder, salt, black pepper and paprika until evenly combined.

    Wet mixture

    In a separate bowl whisk the buttermilk and egg until smooth. Pour the wet mixture into the dry ingredients and stir until a thick batter forms. The batter should be thick enough to cling to rings; if too thick, add 1–2 Tbsp milk, if too thin, add 1–2 Tbsp flour.

    Breading setup

    Place panko breadcrumbs in a shallow dish. Working in batches, dredge each onion ring in the batter, letting excess drip off, then press into panko to coat completely. Set coated rings on a wire rack while oil heats.

    Heat oil

    Pour vegetable oil into a heavy-bottomed pot or deep fryer to a depth of about 2–3 inches. Heat oil to 350°F (175°C). If you don’t have a thermometer, test by dropping a small bit of batter—if it sizzles and rises, it’s ready.

    Fry rings

    Fry the coated rings in batches, careful not to overcrowd the pot. Fry 2–3 minutes per batch, turning if necessary, until golden brown and crisp. Use a slotted spoon or spider to remove rings and drain on a wire rack or paper towels. Fry remaining rings.

    Finish and serve

    Season hot onion rings with a light sprinkle of salt. Serve immediately with ketchup or preferred dipping sauce and lemon wedges if desired.

Caesar Salad (choose if ordering Caesar Salad)

    Prep lettuce

    Rinse and spin dry the romaine lettuce. Chop or tear into 1–2-inch pieces and place in a large salad bowl.

    Assemble salad

    Add the croutons and grated Parmesan to the lettuce. Pour the Caesar dressing over the salad (start with 1/4 cup and add more to taste) and toss gently to coat evenly.

    Finish and serve

    Season with a little freshly ground black pepper and a squeeze of lemon juice if using. Transfer to serving plates and serve immediately alongside the pop.

Pop (Beverage)

    Pour 12 oz of the chosen carbonated soft drink into a cup over ice if desired. Serve chilled alongside the onion rings or Caesar salad.
