Burger Sauce

    Make sauce

    In a small bowl, combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, apple cider vinegar, onion powder, garlic powder, and black pepper. Whisk until smooth. Taste and adjust salt or sweetness if needed. Cover and refrigerate while preparing the rest of the burger (can be made up to 24 hours ahead).

Beef Patties

    Form patties

    Divide the ground chuck into 4 equal portions (about 4 oz each if making two double-stacked patties) or into 2 larger portions if you prefer single thicker patties. Lightly shape each portion into a loose ball, then flatten to a patty about 3/4" thick and slightly wider than the bun. Make a shallow dimple in the center of each patty with your thumb to prevent doming during cooking.

    Season

    Generously season both sides of each patty with kosher salt and freshly ground black pepper just before cooking.

    Cook patties

    Heat a cast-iron skillet or griddle over medium-high heat until very hot (about 5 minutes). Add 1 tablespoon vegetable oil and spread to coat. Place the patties on the hot surface, leaving space between them. Cook without moving for 3 minutes to develop a brown crust. Flip once and cook for another 2-3 minutes for medium doneness. In the last 60 seconds of cooking, place a slice of American cheese on each patty and cover the skillet with a lid or a bowl to melt the cheese quickly.

Buns & Toppings Assembly

    Prepare produce

    While the patties cook, slice the tomato into 1/4" rounds, thinly slice the red onion, and wash and dry the lettuce leaves. Lay out dill pickle slices.

    Toast buns

    Butter the cut sides of the brioche buns with the softened unsalted butter. Once the patties are done, remove them to a resting plate and tent with foil. Place the buttered buns cut-side down on the still-warm griddle or in a clean skillet and toast for 30–60 seconds until golden and fragrant. Monitor closely to avoid burning.

    Assemble burgers

    Spread about 1 tablespoon of the prepared burger sauce on the bottom half of each toasted bun. Place a lettuce leaf on the sauce, then set a cheese-topped patty on the lettuce. Add 2 tomato slices, a few red onion rings, and 4 pickle slices. If making double-stacked burgers, repeat with a second patty and another slice of cheese, then more toppings as desired. Finish with a generous spoonful of sauce on the top bun and close the burger.

    Serve immediately while hot with fries or your preferred side. Leftover sauce can be refrigerated up to 3 days.
