Preparation

    Prepare the Seafood

    Rinse the fish fillets, clams, oysters, shrimp, and calamari under cold water. Pat dry with paper towels.

    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into fries (about 1/4 to 1/2 inch thick). Soak in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Make the Batter

    In a large mixing bowl, combine flour, cornstarch, baking powder, salt, black pepper, and Old Bay seasoning. In a separate bowl, whisk together eggs and milk. Gradually add the egg mixture to the dry ingredients until well combined.

Frying

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Seafood

    Dip each piece of seafood in the batter, allowing excess to drip off, then carefully place them in the hot oil. Fry in batches, ensuring not to overcrowd the pot. Cook until golden brown and crispy, about 3-5 minutes for fish and shrimp, and 2-3 minutes for clams, oysters, and calamari. Remove with a slotted spoon and drain on paper towels.

    Fry the French Fries

    In the same oil, add the prepared fries in batches. Fry until golden brown and crispy, about 4-6 minutes. Remove and drain on paper towels. Season with salt to taste.

Serving

    Plate the Platter

    Arrange the fried seafood and French fries on a large platter. Serve immediately with lemon wedges and tartar sauce or cocktail sauce on the side if desired.
