Method

For the Union Caesar Salad

  1. 1

    Prepare the Lettuce

Rinse the romaine lettuce under cold water, then dry using a salad spinner or by patting with paper towels. Tear the lettuce into bite-sized pieces.

  2. 2

    Combine Ingredients

In a large salad bowl, add the torn romaine, croutons, and grated Parmesan cheese.

  3. 3

    Make the Dressing

In a small bowl, whisk together the Caesar dressing, lemon juice, and black pepper. If using, chop the anchovy fillets and mix them into the dressing.

  4. 4

    Toss the Salad

Pour the dressing over the salad ingredients and toss well until everything is evenly coated.

  5. 5

    Serve

Divide the salad into serving bowls and garnish with additional Parmesan cheese and black pepper if desired.

For the House Baked Corn Bread

  1. 6

    Preheat the Oven

Preheat your oven to 400°F (200°C) and grease a baking dish or skillet with butter.

  2. 7

    Mix Dry Ingredients

In a large mixing bowl, combine cornmeal, all-purpose flour, sugar, baking powder, and salt. Whisk together until well mixed.

  3. 8

    Mix Wet Ingredients

In another bowl, whisk together the milk, eggs, and melted butter until smooth.

  4. 9

    Combine Mixtures

Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.

  5. 10

    Bake the Corn Bread

Pour the batter into the prepared baking dish or skillet and smooth the top. Bake for 20-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.

  6. 11

    Cool and Serve

Let the cornbread cool in the pan for a few minutes, then slice and serve warm alongside your Union Caesar Salad.
