Preparation for Boiling

Prepare the Lobster
Ensure lobsters are alive and stored in a cool place until ready to cook. Rinse them under cold water.

Boil Water
In a large pot, bring 4 quarts of water to a rolling boil. Add 1 cup of sea salt to the boiling water.

Add Lobsters
Carefully add the lobsters to the boiling water, headfirst, one at a time, to avoid splashing.

Boil the Lobsters
Cover the pot and return to a boil. Boil medium lobsters for 8-10 minutes and large lobsters for 12-15 minutes. The lobsters are done when they turn bright red.

Prepare Broiling Mixture
In a small saucepan, melt 1 cup of butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in lemon juice, paprika, and chopped parsley.

Broil the Lobsters
Preheat the broiler. Split the boiled lobsters in half lengthwise and brush the broiling mixture over the meat. Place under the broiler for 3-5 minutes until slightly charred.

Serve the lobsters warm with melted butter on the side for dipping.
