Prepare the Lobster Filling

    Cook the Lobster

    If using live lobster, boil it in salted water for about 8-10 minutes until fully cooked. Remove the lobster and let it cool. Once cooled, remove the meat from the shell and chop it into bite-sized pieces. If using pre-cooked lobster meat, skip this step.

    Mix the Filling

    In a large bowl, combine the lobster meat, melted butter, lemon juice, mayonnaise, finely chopped celery, salt, and black pepper. Mix gently until well combined. Taste and adjust seasoning if necessary.

Prepare the Rolls

    Toast the Rolls

    In a skillet, melt the butter over medium heat. Add the New England style hot dog rolls, cut-side down, and toast until golden brown and crispy, about 2-3 minutes. Remove from the skillet.

Assemble the Lobster Rolls

    Fill the Rolls

    Take the toasted rolls and generously fill each with the lobster mixture. Use a spoon to pack the filling so it’s heaped on top.

    Garnish

    If desired, sprinkle chopped fresh chives on top of the lobster filling and serve with lemon wedges on the side.
