    Shucking the Oysters

    Carefully shuck the oysters using an oyster knife. Discard the top shell and reserve the bottom shell with the oyster. Place the shucked oysters on a tray with crushed ice to keep them fresh.

    Preparing the Breading

    In a mixing bowl, combine the all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper. Mix well.

    Setting up the Egg Wash

    In another bowl, whisk together the eggs and milk until well combined.

    Heating the Oil

    In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of the breading into the oil; it should sizzle immediately.

    Breading the Oysters

    Take each shucked oyster, dip it into the egg wash, allowing any excess to drip off, and then dredge it in the flour-cornmeal mixture, ensuring it is well-coated.

    Frying the Oysters

    Carefully place the breaded oysters into the hot oil, a few at a time, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.

    Draining and Serving

    Once fried, remove the oysters from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with lemon wedges and tartar sauce on the side.
