    Prepare the Fish

    Rinse the fish fillets under cold water and pat them dry with paper towels.

    Season the Fish

    Season both sides of the fish fillets with salt, black pepper, and paprika.

    Set Up Breading Station

    In one bowl, place the all-purpose flour. In another bowl, beat the egg with milk. In a third bowl, place the cornmeal.

    Bread the Fish

    Dredge each fish fillet in flour, dip it into the egg mixture, and then coat it with cornmeal, pressing down gently to adhere.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

    Fry the Fish

    Carefully place the breaded fish fillets into the hot oil and fry for about 3-4 minutes on each side or until golden brown and cooked through.

Assemble the Sandwich

    Prepare the Buns

    While the fish is frying, slice the burger buns in half and toast them lightly if desired.

    On the bottom half of each toasted bun, place a lettuce leaf, then a slice of fried fish, a slice of aged cheddar cheese, a slice of tomato, and pickles.
