Shrimp Preparation

Clean and Butterfly Shrimp
Peel and devein the shrimp. Using a sharp knife, butterfly each shrimp by slicing them down the back, being careful not to cut all the way through.

Prepare Breading Stations
Set up three bowls: one with flour, one with beaten eggs, and one with a mixture of bread crumbs, cornstarch, salt, black pepper, paprika, and garlic powder.

Bread the Shrimp
Dredge each butterflied shrimp first in flour, then dip in the egg, and finally coat with the bread crumb mixture, pressing gently to adhere.
Frying Shrimp

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Shrimp
Carefully add the breaded shrimp to the hot oil in batches. Fry for about 2-3 minutes per side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Fries Preparation

Prepare Potatoes
Peel the potatoes and cut them into thin strips for fries. Rinse in cold water to remove excess starch.

Soak and Drain
Soak the potato strips in cold water for at least 30 minutes, then drain and pat dry with paper towels.
Frying Fries

Heat Oil for Fries
In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C) for frying the fries.

Fry the Potatoes
Fry the potato strips in batches for about 5-7 minutes, or until they are golden and crispy. Remove and drain on paper towels, then season with salt.
Serving

Serve the crispy fried butterfly shrimp alongside the fries. Enjoy with your favorite dipping sauce!
