Method

Preparing the Beans

  1. 1

    Soak the Beans

Rinse the dry navy beans under cold water to remove any dirt or debris. Place the rinsed beans in a large bowl and cover them with 4 cups of water. Let the beans soak overnight or for at least 6-8 hours.

  2. 2

    Drain and Rinse

After the soaking time, drain the beans and rinse them again under cold water. Set aside.

Cooking the Beans

  1. 3

    Preheat Oven

Preheat your oven to 300°F (150°C).

  2. 4

    Prepare the Baking Dish

In a large baking dish or Dutch oven, lay the salt pork or bacon at the bottom. This will provide flavor and fat for the beans.

  3. 5

    Layer the Ingredients

Add the soaked and drained beans on top of the pork. Chop the onion and sprinkle it over the beans. In a separate bowl, mix together the brown sugar, molasses, dry mustard, black pepper, and ground ginger. Pour this mixture over the beans evenly.

  4. 6

    Add Water for Baking

Pour 2 cups of water over the mixture in the baking dish, ensuring all ingredients are moistened.

  5. 7

    Cover and Bake

Cover the baking dish with a lid or aluminum foil. Bake in the preheated oven for 4 to 5 hours, checking occasionally to ensure the beans are not drying out. If necessary, add a little more water.

  6. 8

    Finish Baking

Remove the cover during the last 30 minutes of baking to allow the top to brown and develop a crust. Check for tenderness; the beans should be soft and flavorful.
