Preparing the Beans

Soak the Beans
Rinse the dry navy beans under cold water to remove any dirt or debris. Place the rinsed beans in a large bowl and cover them with 4 cups of water. Let the beans soak overnight or for at least 6-8 hours.

After the soaking time, drain the beans and rinse them again under cold water. Set aside.

Preheat your oven to 300°F (150°C).

In a large baking dish or Dutch oven, lay the salt pork or bacon at the bottom. This will provide flavor and fat for the beans.

Add the soaked and drained beans on top of the pork. Chop the onion and sprinkle it over the beans. In a separate bowl, mix together the brown sugar, molasses, dry mustard, black pepper, and ground ginger. Pour this mixture over the beans evenly.
