Making the Chow Chow

Combine Ingredients
In a medium bowl, mix together chopped green tomatoes, bell peppers, onions, apple cider vinegar, sugar, salt, and spices.

Chill the Mixture
Cover and refrigerate the chow chow for at least 30 minutes to allow the flavors to meld together.
Making Cornbread Crumble

Prepare Cornbread
If not using store-bought, prepare your cornbread and allow it to cool completely. Then, crumble it into small pieces.

Bake Crumble
Spread the mixture onto a baking sheet and bake at 350°F (175°C) for 10-12 minutes until golden brown and crispy.
Making Sweet & Sour Aioli

Combine Ingredients
In a small bowl, whisk together mayonnaise, lemon juice, honey, minced garlic, and salt until smooth.

Adjust Flavor
Taste the aioli and adjust seasoning or sweetness according to preference.
Assembly

Slice and Fill
Once the eggs are peeled, slice them in half lengthwise. Carefully remove the yolks and mix them with the chow chow.

Spoon the chow chow and yolk mixture back into the egg whites.

Top with Aioli and Crumble
Drizzle the sweet & sour aioli over the filled eggs and top with cornbread crumble.
