Method

Preparing the Scallops

    Season the Scallops

    Pat the sea scallops dry with paper towels. Season both sides with salt and black pepper.

    Sear the Scallops

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the scallops and sear for about 2-3 minutes on each side or until they are golden brown and opaque in the center. Remove scallops and set aside.

    Add Butter

    In the same skillet, reduce the heat to medium and add 2 tablespoons of butter. Allow it to melt, scraping up any brown bits from the scallops.

Making the Lemon Butter Sauce

    Cook Garlic

    Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.

    Add Lemon Juice

    Stir in the lemon juice and chopped parsley. Cook for an additional minute, then remove from heat.

Cooking the Asparagus

    Prepare the Asparagus

    While the scallops are cooking, rinse and trim the asparagus. Pat dry.

    Sauté the Asparagus

    In a separate skillet, heat the olive oil over medium heat. Add the asparagus, and season with salt and black pepper. Cook for about 5-7 minutes, stirring occasionally, until tender-crisp.

Serving

    Plate the Dish

    To serve, place a bed of sautéed asparagus on each plate, top with seared scallops, and drizzle the lemon butter sauce over the top. Garnish with additional parsley if desired.
