Salmon Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Season the Salmon

    Pat the Scottish salmon fillets dry with a paper towel. Brush both sides with olive oil and season generously with salt and black pepper.

    Bake the Salmon

    Place the seasoned salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Citrus Saffron Beurre Blanc Preparation

    Sauté Shallots

    In a saucepan over medium heat, melt 1 tablespoon of butter. Add the finely chopped shallots and sauté until translucent, about 2-3 minutes.

    Add Wine and Citrus Juices

    Pour in the white wine, fresh lemon juice, and fresh orange juice to the pan with shallots. Bring to a gentle simmer and reduce the mixture by half, about 5-7 minutes.

    Infuse Saffron

    Add the pinch of saffron threads to the reduced mixture and stir well. Let it simmer for an additional 2 minutes to infuse the saffron flavor.

    Finish the Sauce

    Lower the heat and whisk in the remaining butter, one tablespoon at a time, until the sauce is smooth and creamy. Season with salt and white pepper to taste.
