Method
Preparation
- 1
Prepare the Ingredients
Rinse the salmon fillets under cold water and pat them dry with paper towels. Mince the garlic cloves and set aside. Zest and juice the lemon, keeping the zest and juice separate.
- 2
Season the Salmon
In a small bowl, mix together the olive oil, minced garlic, lemon juice, salt, black pepper, and chopped fresh dill. Rub this mixture all over the salmon fillets to coat them evenly.
Cooking
- 3
Preheat the Oven
Preheat your oven to 400°F (200°C).
- 4
Bake the Salmon
Place the seasoned salmon fillets on a lined baking sheet. Squeeze the lemon zest over the top of each fillet. Bake in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Optional Sides Preparation
- 5
Prepare the Asparagus
While the salmon is baking, trim the ends of the asparagus and toss them in a little olive oil, salt, and pepper. You can roast them alongside the salmon for the last 10 minutes of cooking.
- 6
Cook the Quinoa
In a medium pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
Serving
- 7
Serve the Dish
Once the salmon is cooked, remove it from the oven. Serve the salmon fillets with the roasted asparagus and cooked quinoa on the side. Garnish with additional fresh dill and lemon wedges if desired.
