Pork Belly

Prepare the Pork Belly
Season the pork belly with salt, black pepper, garlic powder, onion powder, and smoked paprika. Make sure to rub the seasonings evenly over the entire surface.

Cook the Pork Belly
Place the seasoned pork belly in a slow cooker. Pour in the apple cider vinegar and water. Cover and cook on low heat for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork belly from the slow cooker and let it rest for a few minutes. Use two forks to shred the pork into bite-sized pieces.

Mix the Aioli
In a bowl, combine mayonnaise, sriracha sauce, lemon juice, minced garlic, and salt. Whisk together until smooth. Adjust the spice level by adding more sriracha if desired.

Pickle the Vegetables
Remove the pickling solution from heat and allow it to cool slightly. Place the carrots, cucumbers, and red onion in a glass jar. Pour the pickling solution over the vegetables, ensuring they are fully submerged. Let them sit for at least 1 hour in the refrigerator.
Assemble the Sliders

Build the Sliders
To assemble, take a slider bun and place a generous amount of shredded pork belly on the bottom half. Top with a spoonful of spicy aioli and a few pickled vegetables. Place the top half of the bun over the filling.

Serve the sliders immediately while warm, with extra spicy aioli on the side for dipping.
