Prepare Coleslaw

Mix Coleslaw Ingredients
In a large bowl, combine the shredded green cabbage and carrots.

Add Dressing
In a separate bowl, whisk together the vegan mayo, apple cider vinegar, maple syrup, salt, and black pepper. Pour the dressing over the cabbage and carrots.

Combine
Toss the cabbage and carrot mixture with the dressing until everything is well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Assemble Sandwich

Lay the Base
Take two slices of whole grain bread and lay them flat on a clean surface.

Layer Plant-Based Turkey
On one slice of bread, layer 4 slices of plant-based turkey.

Add Cheese and Coleslaw
Place 2 slices of vegan provolone cheese on top of the turkey, followed by a generous scoop of the prepared coleslaw.

Spread Russian dressing on the other slice of bread.
