Preparation

    Prepare the Mash

    In a large pot, heat 500 ml of water to around 70°C (158°F). Add 200 g of pale malt and 50 g of caramel malt. Stir well and maintain the temperature for 60 minutes.

    Sparging

    After the mash, sparge the grains with additional hot water to collect approximately 700 ml of wort.

Boiling

    Add Bittering Hops

    Bring the wort to a boil. Once boiling, add 30 g of bittering hops. Boil for 60 minutes.

    Add Flavoring Hops

    In the last 15 minutes of the boil, add 20 g of aroma hops, 5 g of coriander, and 10 g of orange peel.

Fermentation

    Cool the Wort

    After the boil, cool the wort quickly to 20°C (68°F) using a wort chiller.

    Pitch Yeast

    Transfer the cooled wort to a fermentation vessel and pitch 1 packet of Brettanomyces yeast. Seal the vessel and allow it to ferment for 1-2 weeks.

Bottling

    Prepare Bottles

    Sanitize bottles and caps. Prepare a priming solution if carbonation is desired.

    Bottle the Beer

    Carefully transfer the beer into the bottles, leaving a small headspace. Cap the bottles and store them in a cool, dark place for another 1-2 weeks to carbonate.
