Add the canned black beans, curry powder, salt, and pepper. Stir well to combine.

Cook for about 5-7 minutes until heated through and slightly thickened. Remove from heat and set aside.
Tomato Agro Dolce Sauce

Make the Sauce
In a small saucepan, combine halved cherry tomatoes, sugar, red wine vinegar, olive oil, salt, and pepper.

Cook over medium heat for about 10 minutes until the tomatoes soften and the sauce thickens slightly. Set aside.
Couscous Citrus

Prepare the Couscous
In a medium saucepan, bring water to a boil. Add salt, then stir in couscous.

Remove from heat, cover, and let sit for 5 minutes. Fluff with a fork, then mix in lemon zest, orange zest, and chopped parsley.
Garnishes

Prepare the Garnishes
Chop the pistachios and prepare the fresh mint leaves. Toast the slices of sourdough bread until golden brown.
Assemble the Dish

Plating
On a serving plate, create a base with the couscous citrus.
