    Prepare the Lobster Shells

    In a large pot, melt 2 tablespoons of butter over medium heat. Add the lobster shells and sauté for about 5 minutes, stirring occasionally, until they turn pink and become fragrant.

    Sauté Vegetables

    Add the chopped onion, carrot, celery, and minced garlic to the pot. Cook for about 5-7 minutes, until the vegetables are softened.

    Incorporate Tomato Paste

    Stir in the tomato paste and cook for another 2 minutes, allowing it to caramelize slightly.

    Deglaze with Sherry

    Pour in the dry sherry and scrape the bottom of the pot to release any stuck bits. Let it simmer for about 3 minutes until the sherry reduces by half.

    Add Fish Stock

    Add the fish stock to the pot, bringing the mixture to a boil. Reduce the heat and let it simmer for 30 minutes.

    Strain the Broth

    After simmering, strain the broth into a clean pot, discarding the shells and solids. Return the strained broth to the heat.

    Add Heavy Cream

    Stir in the heavy cream, remaining butter, salt, and black pepper. Allow the bisque to heat through without boiling, about 5 minutes.

    Add Lobster Meat

    Gently fold in the lobster meat and let it warm in the bisque for an additional 2-3 minutes.

    Ladle the bisque into bowls, garnish with chopped chives, and serve hot.
