Method

Cake Directions

  1. 1

    Preheat the oven

Preheat your oven to 350°F (175°C). Prepare a 9-inch round cake pan by greasing it and lining the bottom with parchment paper.

  2. 2

    Mix dry ingredients

In a large bowl, combine almond flour, all-purpose flour, baking powder, and salt. Whisk together until well incorporated.

  3. 3

    Cream butter and sugar

In another bowl, beat together the unsalted butter and granulated sugar until the mixture is light and fluffy, about 3-5 minutes.

  4. 4

    Add eggs and lemon

Add the eggs one at a time, mixing well after each addition. Then, mix in the lemon zest and lemon juice until combined.

  5. 5

    Combine wet and dry ingredients

Gradually add the dry ingredient mixture into the wet mixture, mixing just until combined. Do not overmix.

  6. 6

    Bake the cake

Pour the batter into the prepared cake pan and smooth out the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  7. 7

    Cool the cake

Remove the cake from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Whipped Cream Directions

  1. 8

    Prepare whipped cream

In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer on medium-high speed until soft peaks form.

Macarated Berries Directions

  1. 9

    Macarate the berries

In a bowl, combine the mixed berries, granulated sugar, and lemon juice. Gently toss to coat the berries. Allow to sit for at least 15 minutes to release their juices.
