Cocktail Preparation

Mix the Base Ingredients
In a mixing glass, combine 2 oz of Brooklyn NY gin, 0.5 oz of dry vermouth, 0.25 oz of green chartreuse, and 0.5 oz of fino sherry.

Stir and Chill
Fill the mixing glass with ice and stir the mixture for about 30 seconds until well chilled.

Strain into Glass
Using a fine mesh strainer, pour the cocktail into a chilled martini glass.
Rosemary Foam Preparation

Prepare Rosemary Infusion
In a small saucepan, bring 1 cup of water to a boil. Add 2 sprigs of fresh rosemary and steep for about 10 minutes. Remove from heat and let it cool.

Make the Foam
In a cocktail shaker, combine 1 large egg white, 1 tbs of simple syrup, and 1 oz of the rosemary infusion (discard the rosemary sprigs).

Shake to Emulsify
Shake vigorously without ice for about 30 seconds to emulsify the ingredients.

Add Ice and Shake Again
Add ice to the shaker and shake again for another 30 seconds until chilled.

Strain the Foam
Double strain the foam into a separate glass to ensure a smooth texture.
Final Assembly

Top the Cocktail
Using a spoon, gently layer the rosemary foam on top of the prepared cocktail in the martini glass.

Garnish with a small sprig of rosemary on top of the foam for an aromatic touch.
