    Slice the Vegetables

    Thinly slice the onions, mushrooms, and optional green bell pepper. If using hot or sweet peppers, slice them as well.

    Prepare the Steak

    Trim any excess fat from the ribeye steak and slice it thinly against the grain. This helps to make the steak more tender.

Cooking

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the sliced onions, mushrooms, and green bell pepper (if using). Season with salt and pepper. Sauté for about 5-7 minutes, or until the vegetables are tender. Remove from the skillet and set aside.

    Cook the Steak

    In the same skillet, increase the heat to medium-high. Add the sliced ribeye steak to the skillet. Season with salt and pepper. Cook for 3-5 minutes, stirring frequently, until browned and cooked to your desired doneness.

    Return the sautéed vegetables to the skillet with the steak. Mix well. Lay the slices of white American cheese over the mixture, allowing them to melt for about 2 minutes.

    Slice the hoagie rolls open lengthwise without cutting all the way through. Fill each roll generously with the steak, cheese, and vegetable mixture. Add hot or sweet peppers if desired.
